Ingredients
    Caramelized Pineapple Topping
  • 80 g Butter
  • 120 g Soft light brown sugar
  • 7 pineapple slices/rings (drain and reserve juice)
  • 50 ml pineapple juice (from the canned pineapple)
  • 7 Glace Cherries (or Maraschino cherries, drained)
  • Cake
  • 150 g Self raising flour
  • 150 g Butter
  • 150 g Caster Sugar
  • 3 Eggs
  • 1 tsp Vanilla Extract
  • 3 tsp Powdered milk
Instructions
  1. Preheat the Oven:

     

      • Preheat your oven to 350°F (175°C).
  2. Prepare the Pineapple ToppingPrepare the Pineapple Topping: - Melt the butter and pour it into a lined 8-inch round cake pan. Sprinkle brown sugar evenly over the melted butter.       • In a medium bowl, whisk together flour and powdered milk. Set aside.
      • In a large bowl, beat butter, granulated sugar and eggs until light and fluffy. Add vanilla extract and mix until combined.

  5. Assemble and Bake

     

      • Pour the cake batter over the pineapple slices in the prepared cake pan, spreading it evenly.
